Mills County is a major producer of meat goat and bills itself as the “Meat Goat Capital of America.”
Demand for meat goat has been increasing in the United States, and it is a major meal staple in many Hispanic, Muslim and Caribbean cultures. In the United States, some consumers call the meat “chevon,” while others call it “cabrito.”
